Pizza is one of the best snack ever especially when partnered with soft drinks...oh  sooooo yummy!. My family love pizza and so do I. Pizza in the Philippines became more expensive that sometimes a simple and average family couldn't afford to buy. There is a solution to this...we love pizza but we should budget wisely, then make your own home made pizza. You can make pizza bread or you can buy a big pizza dough in groceries. You can make pizza even without oven. I make pizza using a non-stick pan to save energy or an oven toaster for bread pizza. It's so easy and very interesting to prepare pizza for your self. The advantage of making a home-made pizza is you can play with it, you can experiment flavors and make the best pizza ever. You can make left-over foods such as ham or bacon to make your budget-wise pizza. I always make home-made pizza and I always enjoy preparing it with the help of my kids because they love decorating pizza so much.

In making home-made pizza as I mentioned above, you'll be needing a dough or you can use pandesal (divided in to two parts) or you can use sliced bread.

Here are the Ingredients:
  • 20 pcs. sliced bread or 1 big dough
  • tomato sauce or ready made pizza sauce which can be found in groceries
  • 1 green bell pepper,sliced
  • 1 big onion, ring cut
  • 50 grams sliced quick melt cheese
  • pineapple chunks
  • bacon or hotdog or you can even use sausage
Procedure:
  • Get your dough or sliced bread
  • Brush with tomato sauce or pizza sauce
  • Arrange toppings on top start with bell pepper, bacon or hotdogs, pineapple chunks, onion rings, then add quick melt cheese on top.
  • On a non-stick pan, place your pizza, put cover and cook over extra low heat.
  • When the cheese melted, your pizza is ready.
  • Remove from heat
  • Serve hot.

When using bread as dough, you can use oven toaster, just follow the steps then put inside your oven toaster and set to 2 minutes and you'll get the same result.

Bibingka is a variant of rice cake which is a popular pinoy "kakanin" that usually "in" during Christmas season. It is made of ground glutinous rice and baked in the middle of fired charcoal. 

Bibinka is very yummy especially if it has toppings such as sliced salty eggs, butter or cheese. Sometimes  when I'm craving for bibingka,  I've got to travel far just to find the best bibingka.  

 It's easy to cook bibingka, I just don't think if there's a store who sells specialized stove for it. The stove used in cooking rice cake is similar to the charcoal stove that we . There should be fired charcoals underneath and above the bibingka to get even cooking. 

I have not tested yet if you can just cook it in the oven, I think it can be but may not so sure if it'll be as delicious as cake roasted between charcoals.Bibingka roasted in charcoals has a very different taste. A little taste of smoke makes the bibingka special.

This Christmas season, I saw many different bibingka all over the country. I saw it on tv and blogs. Just like "puto bumbong" it's the season of bibingka. I wonder how it all started, that when you mention Christmas, you'll also be thinking of these foods. I don't know, maybe I should research for the history of bibingka. For the mean time, let's learn to make a home-made bibingka.

Ingredients:

2 cups rice flour
1/2 tsp. salt
5 teaspoon baking powder
6 tablespoons butter
2 cups granulated sugar
2 cups coconut milk
1/2 cup evaporated milk
2 pieces salted duck egg, sliced (itlog na maalat or itlog na pula)
1 cup grated cheese

Banana leaves (cut according to size)

Procedure:

Combine glutinous rice, salt evaporated milk, coconut milk and glutinous rice. Mix well then set aside.
Arrange the banana leaf in a llanera.
Pour in the mixture in a llanera
Put over the fired charcoal in clay oven, put cover and add fired charcoal on top.
Roast for 15-20 minutes.
Remove from heat then add toppings: cheese, salted egg and cheese
Put back in clay oven and roast for another 10 minutes.
Remove from heat and serve hot.

Pork Steak is a Filipino dish that we inherited from the land of "uncle Sam". We, Filipinos usually called it "bistek" a tagalog slang for "steak". Although steak is not so expensive to make, it still symbolizes a good status in life for Filipinos. I remember one time, my mom's friend asked: "what's your viand for today" my mom repied: "pork steak" and her friend teased her: "wow, pa-steak steak na lang, social!"  very funny but I love How we  Filipinos treat life funny and easy. Steak recipe can be done with fish, beef, chicken, pork and the most popular in the Philippines: egg plant steak or what we usually called as "bistek na talong".

Among steak recipes I mentioned above, my most favorite is beef steak. I love the pure lean beef although pork with little fats attached is quite good especially if you don't serve it very often.. There are times that I want to be vegetarian for a day, I cook eggplant steak too. Every time I cook steak, I can't help eating more than the usual meal take. I really love the fresh onion on top of it and the yummy taste of soy sauce with calamnsi and a little touch of sweet and spicy flavor...OMG! I'm craving for steak!. My family love steak so much so I always make sure to prepare it for them during Sunday when we are complete at home and I make sure always to back up "extra rice".

Cooking steak is one of the easiest procedure of all recipes I wrote in my food blog. I'm pretty sure that like me, you and your family will enjoy this recipe. Just make sure to cut exact number of slices to serve for each family member. I will show you the procedure  in cooking pork steak which can make 5 servings just follow the steps below:

Ingredients:


  • 5 pcs. pork chops
  • 5 tbsp. soy sauce
  • 1 pc. calamansi
  • 1 big white onion (ring cut)
  • 1/2 cup cooking oil
  • 1 cup water
  • 1/2 tbsp. white sugar
  • salt and pepper to taste

Procedure:


  • Prior cooking, combine soy sauce, calamansi extract, sugar, salt and pepper in a bowl. Marinade pork chops for at least 1 hour but if you prefer to marinade it over night it would be better.
  • On a pan, heat cooking oil over medium heat.
  • Pan-fry the marinated pork chops for 5 to 10 minutes. Turn upside down and fry for another 5 minutes.
  • Upon frying, pork will produce oil and you have to remove these excess oil  to avoid too much fat.
  • Pour in the marinade, cover and let it boil for at least 30 minutes over medium heat.
  • Add water then boil for another 15 minutes or until meat is tender.
  •  Put in the onion rings on top the cover and remove from heat. The remaining heat inside the pan will slightly cook the onions but onions will remain fresh.
  • Transfer to serving plate.
  • Serve with rice and enjoy!

note: This procedure can be done  with beef,chicken,fish and eggplant.

Alimango or Alimasag are tagalog terms for blue crabs. Blue crabs are commonly found in the Philippine's bicol region. It is one of the most expensive seafood in the country. according to American Heart Association, we should eat seafood at least twice a week to keep our body healthy. alimango can give us so much health benefits do we should make eat seafood especially alimango regularly. Alimango is a good source of Omega-3 fatty acids. It also has lean protein which is very essential in building myscles. Alimango is also a good source of vitamins and minerals such as Vitamin B12, Niacin, Zinc and Phosporus.

One of the most famous Alimango recipes in the Philippines is "ginataang alimango" or Blue crabs cooked in coconut milk. This recipe is usually flavored with different spices and vegetables. Ginataang Alimango is easy to prepare and it's very delicious that your family will surely enjoy. I learned cooking ginataang alimango from my mom who is bikolana when I was a kid and I'm so proud to say that she cooks the best ginataang alimango in town.

In cooking ginataang alimango, you have to prepare these ingredients:

4 pcs. alimango, medium sized
1/2 liter coconut milk
1 large chopped onion
3 cloves minced garlic
100 grams kalabasa (squash), cut into cubes
5 strips sitaw (string beans) cut to 3 inches each
3 tbsp. fish sauce
1/2 tsp salt
1/2 ground black pepper
2 pcs. red chili (siling labuyo)
3 tbsp. cooking oil

Procedure in Cooking Ginataang Alimango

Heat oil on a deep pan
Saute garlic and onion.
Add alimango, add vegetables on top and add all seasonings and flavors then cover and cook for 20 minutes.
The extracts of crabs and vegetables will come out so you don't need to add water. Cooking the food in its own juice will maintain the purity of the taste.
After 20 minutes, check the crabs, if it's color became orange, stir and mix and add the coconut milk.
Cover and boil for another 10 minutes.
Adjust seasoning if needed.
Serve with rice.
Enjoy!

This recipe is usually as dish viand during lunch or dinner. It makes 4 servings.
